When Pooja Bavishi decided to launch her ice cream company, Malai, she was able to do so with the clarity of her own personal goals. "I started Malai in order to celebrate the flavors I grew up with as a young Indian American in a popular and mainstream fashion," she says.
"Everyone has an ice cream memory from their childhood, which is usually about going to the local ice cream shop to share a treat with your loved ones," Pooja says. This nostalgia-infused fusion has taken Malai from a stand at markets and local food halls into freezers at grocery stores and pop-up carts all over New York City, and a bustling flagship location located in Brooklyn offering local and national delivery.
